Amaranth

Ingredients

200 gm amaranth seeds
400 ml FAIRTRADE Apple Juice
50 ml FAIRTRADE white wine
FAIRTRADE Sources
Wine
Fruit Juice

Method

Preparation
Pour the amaranth seeds into a non stick frying pan, and place over high heat for about 5 minutes. Some seeds will "pop", and some will toast. When you have a tasty aroma, remove from the heat.
Cooking
Bring the apple juice up to the boil in a saucepan and add the wine and amaranth seeds. Bring back to the boil and simmer for about 20 minutes. At this volume of liquid to seeds, there will be some juiciness left with the seeds. Assembly
Use as necessary in main courses, dessert courses, or breakfast dishes.
