Armenian Salad

Vibrant colours and flavours in a fresh, juicy salad.
This is an Armenian dish.

Ingredients

Salad Ingredients
1 organic cucumber
1 bunch hot radishes
2 medium organic tomatoes
10 pitted black olives
1 tablespoonful pine kernels
Dressing Ingredients
20 ml Zaytoun FAIRTRADE PalestinianOlive Oil
60 ml red wine vinegar
1 FAIRTRADE lemon
large pinch salt
to taste FAIRTRADE ground black pepper

Method

Preparation
Food:
Top and tail the cucumber, slice lengthwise into quarters and chop into 1 cm chunks.
Top and tail the radishes and slice thinly.
Chop the tomatoes into chunks comparable to the cucumber chunks.
Dressing:
Juice the lemon and discard the skin.

Assembly
Mix the prepared salad ingredients together, gently, in a mixing bowl.
Mix the oil, vinegar and lemon juice together in a small bowl, and season with the salt and pepper.
Pour the dressing over the salad and turn.
Chill for at least one hour before serving.

To serve
Serve well chilled.
