Beans and Rice

Complementary protein from the beans and the rice increases the nutritional value of this dish which may be found in Latin America, sub Saharan Africa, and South Asia not to mention the affluent west. This is a beany stew with rice.

Ingredients

250 gm Fair Trade beans
500 gm FAIRTRADE basmati white rice
FAIRTRADE Sources
Fresh food
Lemons
Rice
Pulses

Method

Preparation
Soak the beans overnight.
Cooking
Cook the beans in the ususal way.
Cook tomato sauce in the usual way.
Cook rice in the usual way.
Assembly
Drain the cooked beans and mix them into the tomato sauce, and then pour into a serving dish.

To serve

Serve over white rice.

Variation

This works with pretty much any beans.
Add some chopped capsicum to the sauce to add more interest.
