Chicken Marrakesh

Aromatic and delicious stuffing make this a chicken dish to remember.
Marrakesh, Morocco, exotic sounding.
Serves 4 as part of a main course, with left-overs.

Ingredients

1.5 kg Whole chicken
A little sunflower oil
2.5ml FAIRTRADE ground ginger
2.5ml FAIRTRADE ground cinnamon
2.5ml FAIRTRADE turmeric
salt and FAIRTRADE black pepper to taste
The Stuffing
60gm (dry weight) FAIRTRADE rice - cooked
2.5ml FAIRTRADE ground ginger
2.5ml FAIRTRADE ground cinnamon
2.5ml FAIRTRADE turmeric
250ml water
100gm FAIRTRADE raisins
100gm FAIRTRADE almonds toasted and chopped

Method

Remove giblets from the chicken and discard.
If necessary wash the chicken.
Using a cast iron skillet, heat the oil and brown the chicken on top of the cooker. This takes about 15 minutes or so.
Meanwhile make the stuffing viz:
In a mixing bowl mix together the rice, raisins, ginger, cinnamon, almonds, turmeric and salt with a little water.
Spoon the stuffing into the chicken.
Boil the water and blend it with the remaining ginger, cinnamon and turmeric.
Pour this over the chicken, put a lid on the pot and cook in a hot oven (Gas Mark 6) for 90 minutes.
Check if the chicken is done by piercing with a sharp knife in a fleshy bit. If the juices run clear the chicken is cooked.

To serve

Serve with vegetables of your choice or with a green salad.
