| The Stuffing |

Method
Remove giblets from the chicken and discard.
If necessary wash the chicken.
Using a cast iron skillet, heat the oil and brown the chicken on top of the cooker.
This takes about 15 minutes or so.
Meanwhile make the stuffing viz:
In a mixing bowl mix together the rice, raisins, ginger, cinnamon, almonds, turmeric and salt with a little water.
Spoon the stuffing into the chicken.
Boil the water and blend it with the remaining ginger, cinnamon and turmeric.
Pour this over the chicken, put a lid on the pot and cook in a hot oven (Gas Mark 6) for 90 minutes.
Check if the chicken is done by piercing with a sharp knife in a fleshy bit.
If the juices run clear the chicken is cooked.
To serve
Serve with vegetables of your choice
or with a green salad.
