Curried Red Quinoa

Countries of origin: Peru, Bolivia. Red Quinoa, known as the mother grain, for its nourishing properties, is a tiny seed, gluten free. It is a complete protein containing all eight essential amino acids. Good Stuff.
Curried Red Quinoa

Ingredients

200 gms Suma FAIRTRADE Red Quinoa
vegetable oil
2 medium onions
2cm ginger root
large pinch cayenne pepper
3ml FAIRTRADE ground turmeric
3 ml ground coriander
large pinch FAIRTRADE ground cinnamon
2 ml salt
400 ml water
200 gm frozen peas

Method

Preparation
Wash the quinoa in plenty of cold water.
Top, tail, peel and chop the onions.
Peel and grate the ginger.

Cooking
In a La Creuset pan gently stir fry the onions for a few minutes until translucent but not browned.
Meanwhile drain the quinoa.
Add the ginger, the cayenne, and the quinoa and stir fry for a minute or so.
Add the other ground spices and stir fry for another minute.
Add the water and salt and heat to boiling, turn down to a simmer and put the lid on the pan.
After 15 minutes add the peas.
Continue to simmer until the water is all absorbed and the quinoa is soft.

To serve

Fluff the grains with a fork before serving.

Variation

A clove of garlic can be added with the onions.
