Garlic Mashed Potatoes

The Moosewood Restaurant has a very similar recipe, so it must be good.

Ingredients

1 kg potatoes
6 cloves garlic
water
5 ml salt
30 ml margarine
5 ml FAIRTRADE freshly ground black pepper

Method

Peel the potatoes and chop small 5 mm cubes.
Peel the garlic and crush.
Place the potatoes, salt and garlic in a saucepan and just cover with water. Bring to the boil and then cover and simmer for 12 minutes.
Drain the cooking water off the potatoes. Add the margarine and mash until smooth.
Add some pepper to taste and mash again.

To serve

Serve hot.
Or use as a pie topping.

Variation

Try a little natural yoghurt for a tangy flavour.
