Hash Browns

English fried breakfast is great if you have a fast running metabolism, and hash browns, hot are a good part of that. The best hash browns in UK are in Scottish hotels.

Ingredients

450 gm potatoes
1 medium onion
1 clove garlic
cooking oil
salt and fresh FAIRTRADE black pepper
large dob margarine
splash milk
125 gm plain flour

Method

Peel the potatoes and cook as per boiled potatoes.
In the meantime top, tail, peel and finely chop the onion and garlic and fry in a frying pan until well cooked and starting to brown.
Once the potatoes are cooked drain them and mash them adding a little margarine, salt and pepper to taste, and a splash of milk. The mash needs to be quite smooth.
Add the flour and mix and add the cooked onions and garlic and mix well.
Turn the mash out into triangles and fry both sides in a little more oil until brown all over.

To serve

Serve hot with sausages and eggs, and a dob of butter.
