These instructions make about 75 ml or 15 tablespoons worth of mixture. Store any unused mixture in a sealed (and labelled) glass jar.
Making the mixture in this (large) volume enables accurate measurement the quantities of ingredients.

Ingredients

10 ml Paprika
5 ml FAIRTRADE freshly ground black pepper
5 ml FAIRTRADE ground ginger
5 ml salt
10 ml hot chili pepper
5 ml ground cumin
5 ml ground coriander
10 ml FAIRTRADE ground cinnamon
5 ml allspice
10 ml FAIRTRADE cardomom pods
20 FAIRTRADE whole cloves
1 FAIRTRADE ground nutmeg

Method

Assembly
Take the shells off the cardomom pods, and crush the seeds together with the whole cloves using a pestle and mortar.
Grate the nutmeg using the fine side of a grater.
Assemble the spices in a small (dry) mixing bowl and mix thoroughly.
Measure the portion needed for your recipe and store the rest for future use.
