Onion Sauce

An English dish but with Indian tendencies.
This sauce goes well with spicy food.

Ingredients

3 medium cooking onions
2 cloves garlic
50 ml FAIRTRADE white wine
1 FAIRTRADE lemon
salt
FAIRTRADE freshly ground black pepper
10 ml curry powder
5 ml (extra) ground cumin

Method

Preparation

Peel the onion and chop small.
Peel the garlic and chop.
Juice the lemon.

Cooking

In a saucepan fry the onions and garlic in a little oil to get them going and until they start to turn translucent.
Add the ground spices and continue to fry for 2 minutes.
Add the wine and lemon juice and stir to de-glaze the pan.
Adjust the flavour with salt and pepper to taste.
Put all of the mixture into a food mixer and "whizz" to a smooth consistency.

To serve

Serve hot.
