Traditional beef stew from Spain.
Quantities for 4.

Ingredients

500 gm diced stewing beef
2 medium onions
4 large carrots
4 cloves garlic
400 gm tin chopped tomatoes
20 stuffed green olives
10 ml oregano
10 ml dried or fresh parsley
5 ml cayenne pepper

Method

Preparation

Prepare the veg in the usual way, trimming off roots and unwanted skin etc.

Cooking


In a large heavy pan, seal the meat in little hot olive oil, and season with salt and fresh ground black pepper.
Add the cayenne pepper.
Add the sliced onion, chopped carrots, and chopped garlic and fry for a few minutes.
Add tomatoes, olives, oregano and parsley.
Cover and simmer for about 90 minutes or longer until the meat starts to go tender.
Add a little stock if necessary to cover the vegetables.
Simmer uncovered until juices are thick enough.

To serve

Serve with quinoa, rice, or pasta as the mood takes you.

Variation

Add some potatoes with the carrots.
Like all stews, the meal is very forgiving and can tolerate increases in meat, veg, seasoning, herbs etc.
